Blizzard Colbie has hit Mystic pretty hard. So far we have about 18” or so, and it is still coming down.
All this snow is the perfect excuse to indulge in some hot cocoa. Below is a recipe that I’ve tweaked over the years. It is rich and velvety and oh-so-warming during this blizzard!
¼ cup unsweetened cocoa powder
½ cup sugar
1/3 cup hot water
pinch of salt (I like to use sea salt)
4 cups milk
1 teaspoon vanilla extract
Combine the first 4 ingredients in a saucepan. Over medium heat, stir constantly until the mixture boils. Continue stirring for 1 minute.
Add the milk (whole milk, almond milk, soy milk…whatever you like best). Heat mixture through, being careful not to boil.
Remove from the heat and add vanilla extract, and chili powder to taste.
~ Add a vanilla bean instead of the extract
~ Add cinnamon with the chili powder
~ Use peppermint extract instead of vanilla, and eliminate the chili powder
~ My personal favorite….add a splash of Coole Swan Irish Cream. (Don’t know about Coole Swan? Do yourself a favor and go get some right now. It’s like Bailey’s, but so much better. You’re welcome).
